I "color" my chicken salad with those mixed frozen vegetables (peas + carrots + corn). These have absolutely no taste, but look good.
I've had chicken salad made with green grapes before. Very delicious. You might also want to add some walnuts also if you have any on hand. For a tropical twist you can also use a mixture of pineapple tidbits and coconut in addition to the walnuts.
